Starbucks Egg Bite Dupes

I was having lunch with my friend Christine when she showed me a reel of Starbucks egg cup dupes. I was like, oh! I can do that only much yummier. So here it is. Ever since Christine put these on my radar, I’ve heard mention of them everywhere — a Trader Joe’s version I spotted this morning… friends say they’re addicted…

So here is my version. And I promise that it’s more delicious than what you can buy anywhere! Also better for you! Have you seen the ingredients list on those Starbucks ones? Yikes!

Make these on a Sunday night and enjoy them all week long!

Note: This recipe is written for 8 large sized muffin molds, but it’ll work for 12 regular sized molds as well. Simply reduce the eggs to 6 and the cottage cheese to 1 cup.

  • 4 oz pancetta

  • 1 can whole artichoke hearts, rinsed

  • 2 cups fresh spinach

  • 1.5 cup cottage cheese

  • 2 tsp kosher salt

  • 1/4 tsp pepper

  • 8 eggs

  • 1/2 cup grated cheese (I recommend raw Gruyere or Parmigiano-Reggiano)

Preheat oven to 375. Sauté pancetta in a skillet until crispy and tan. Allow it to cool and drain off the fat by placing it onto a plate lined with a paper towel.

Grease muffin molds with avocado oil spray or olive oil. Pulse all ingredients except for the pancetta and the cheese in a food processor or blender. Do not over blend as to leave the fiber intact. Stir in cheese.

**Boil about 3 cups of water.

Distribute tablespoon-size scoops of pancetta onto the bottom of the muffin molds. Then pour egg mixture over.

**Now pay attention: This part is optional but it will create the fluffy soufflé effect; so I highly recommend it. Take a rimmed baking sheet or an empty casserole dish and place it on the bottom rack of your oven. Now pour the boiling water into it.

Place the prepared muffin molds on the center rack of the oven and cook for 30 minutes (or 20 if using standard size molds). A cake tester should come out clean when done.

And that’s it! You’re done! Store them in the refrigerator and reheat them in the toaster oven. You can even freeze them. They’ll keep you satiated for hours! And kick those Starbucks egg bites to the curb with all their gums and starches!
