Coco Macadamia Energy Balls

Don’t all those energy balls/fat bombs always look so good? They do to me too, but then I check the ingredients and they’re filled with a bunch of stuff I don’t eat and neither should you.

Oats? Nope. Peanut butter? No thanks. A bunch of fructose from dates or maple syrup? Just say no to that too.

These that I’ve created are absolutely delicious with the perfect amount of sweetness. The high omega 3 content in the macadamia nuts will deliver to you a healthy fat that’s good for your brain and heart. They’ve got protein and fiber That will satiate you thanks to the hemp seed. flax, and psyllium husk .

if you’d like to use unsweetened shredded coconut instead of coconut flour in the dipping mixture, by all means, feel free.

This is a recipe your kids will love too! So much better than handing them one of those store-bought bars filled with junk. They make the perfect snack for you or them!

  • 1 cup macadamia nuts (salted is okay 👍🏼)

  • 2 tbsp hemp seeds

  • 1 tbsp flax meal

  • 2 tsp psyllium husk

  • 1.5 tsp monk fruit (or raw organic honey)

For dipping:

  • 2 tbsp coconut flour

  • 1 tsp cacao or unsweetened cocoa powder

Blend macadamia nuts until a smooth butter. Add in everything else except for the coconut flour and cacao. Pulse until combined. Form tablespoon size balls and put in the freezer to chill, about 20 minutes.

Whisk together coconut flour and cacao. Roll your little balls in them to coat. Store them in a jar in the fridge and enjoy them as a snack or before a workout. Your kids will love them too!

Makes 8 balls
